• Begin to heat up the oven to 220 C.
• Cut the butternut squash into small cubes and place them on a tray. Roast in the oven dressed in some olive oil for about 15-20 min. Let’s prepare the rest when the butternut gets ready!
• Now it’s time to blend the chunk smash: simply mix the yogh*rt, the chunk, salt and pepper and grated lemon zest.
• Peel and chop the nuts.
• Heat a pan with some olive oil and cut the bread into slices and add them to the pan. Fry until golden and remove from the pan.
OK so when everything has been prepped, let us start with the fun part - the plating. In the first layer we put the smash, then the butternut squash and then top with the fresh thyme and some more lemon zest. Serve with the toasted bread and bon appetit!
