Sweet Potato Spread Toast

1 serving

  • 1 large sweet potato
  • Spread
  • 2 tsp neutral oil
  • A drizzle of agave
  • Caramelized pecans
  • Handful of blueberries
  • Salt & pepper to taste

  • Turn the oven on to 200 C. 
  • Cut off the edges of the sweet potato.
  • Slice the potato in 2 cm thick slices to create the base of the toast.
  • Drizzle the slices with oil and place in oven for about 30 minutes.
  • Top off the toast with spread, blueberries and caramelized pecans.
