Mexican Corn

  • 4 corn cobs
  • 4 table spoons of vegan mayo
  • A handful of mint leaves
  • ½ chunk (75 g)
  • 1 lime
  • chili flakes
  • tortilla chips

• Start to grill or fry the corn cobs until golden.

• Meanwhile, chop the mint into small pieces.

• Place the corn cobs on a serving plate and rub the mayo on each cob.

Topp the corn cobs with chili flakes, mint leaves, tortilla chips juice and zest from the lime and of course the chunk. Fit perfectly to any Mexican meal or as a side dish! 🌽🧀
